Away Again

I will be having a break in posts for a couple of months.

On the weekend I leave for a farm in Washington State that makes goat and sheep cheese. I'm looking forward to learning about how to make and cultivate cheeses of various varieties, how to live without internet(!) and hopefully getting back to and experiencing more nature as well.

I'm trying so hard not to be incredibly jealous! >.< I'm a chicken when it comes to seeking out that kind of opportunity, but they occupy my most idealistic day dreams.

I'm also incredibly curious if you don't mind my asking, what cooking program have you been studying with?

I go to Seattle Centrals Culinary Accademy - I do the Specialty Desserts and Bread program. It's a very French/European program in the sense that we don't make doughnuts or pies we have to make tarts instead. It's pretty god. We've been on a break since March as they are renovating the work area (which will be great). So I have until September to waste some time. So I plan on going to the farm (they have goats and sheep there) for a couple of months to keep me busy.

So you are a baker - what do you bake? Do you enjoy what you do?

Year gone by and I notice again I left you hanging.

I bake cakes and pastries. Pies and tarts. And breads. Completely in love with pastries though. Not always as often as I'd like to, but I keep coming back to it and wishing I knew more. And so... I'm seriously considering a pastry program. Even more seriously than I have previously 'seriously concidered' it.

Now I'm just trying to find the right program and the right city.
